Add in the butter and stir until just combined. Spoon batter into prepared muffin cups, filling each about three-quarters full – you should have enough batter for 12 muffins total.[2] Bake until tops are golden brown and a toothpick inserted into the center comes out clean (about 20 minutes). Cool in pan on a wire rack for 10 minutes before turning out onto racks to cool completely.[3] Serve warm with room temperature buttercream icing or coconut whipped cream frosting[4]. If desired, garnish with berries or sprinkles!
