
Introduction
I’m a massive fan of cupcakes, but I was never able to enjoy them because they’re usually made with flour and milk. So, I decided to make my own version of chocolate cupcakes which are vegan and gluten free as well!
Take 1 ½ cups of all-purpose flour, 1 cup of sugar, ½ cup of unsweetened cocoa powder and 2 teaspoons baking powder. Mix them in a bowl.
- Using a stand mixer or hand mixer, mix the flour, sugar and cocoa powder in a large bowl.
- Put ½ cup of water and 1 teaspoon of vanilla extract into a saucepan on medium heat until it boils. Pour the hot water into the creamed mixture slowly while mixing (if you use a hand mixer here). When fully combined add 1 tsp salt and ¼ cup vegetable oil to the batter too.
- Preheat oven at 350°F (180°C). Grease your muffin tin with cooking spray or butter before pouring in the cake batter to every muffin cup filled up to ¾th level as shown in picture below:

If you don’t have a double boiler or are not familiar with how to use one, here’s what you need to know: Place some water in your larger pot or pan and then place the smaller pan or bowl on top of that (the smaller container should be able to sit above but not touching the water). Heat over medium heat until it comes up to simmering temperature—you may want to hold off on turning up the heat until you’re sure everything is well combined. If at any point while adding your chocolate mixture into your cake batter mixture you see that it is burning just remove from heat immediately! This will ruin all of your hard work!

For frosting, take cream cheese, butter and vanilla extract in a large bowl. Whisk them together till you get a creamy consistency. Gradually add icing sugar and whisk again until you get a thicker consistency. Spread on the cake tops and decorate with sprinkles or chocolate curls for finishing touch

The recipe for these treats can be easily adjusted to be gluten free, vegan or dairy free as per requirement

To make the cakes gluten free use gluten free flour instead of all purpose flour. You can also use vegan margarine instead of butter and coconut oil instead of butter. For dairy-free cupcakes substitute cow’s milk with soy milk and sugar with sugar substitute (like stevia). If you want to go completely vegan, then use vegetable oil instead of butter too!
