Easter Pregnancy Announcement Cookies

These cookies would be fun to make and give to your family on Easter, especially if you are expecting a little boy or girl!

115 grams unsalted butter, softened

  • Soften the butter in the microwave for about 10 seconds. This makes it easier to spread evenly over the cookie.
  • Use a butter knife to spread it evenly over the cookie, being sure not to use too much or your cookies will be greasy and dry out quickly; also make sure you don’t use too little or they won’t come out right either! It’s a tricky balance, but you’ll get the hang of it after making these cookies once or twice—they are well worth their deliciousness once again!

75 grams caster sugar

You can use caster sugar, but granulated sugar is a better choice.

Icing sugar is also called confectioner’s sugar and will work if you don’t have any caster sugar on hand.

150 grams plain flour

You’ll need to sift the flour into a mixing bowl. Add the baking powder and vanilla extract, then add the butter and sugar, mixing until combined. Add the milk and mix until the dough comes together. Knead for about 5 minutes until smooth, then wrap in cling film and chill for 30 minutes before rolling out as described below.

1/2 teaspoon baking powder

Baking powder is a leavening agent, which means it causes the cookies to rise in the oven. Baking soda is also a leavening agent and will react with acidic ingredients like buttermilk or brown sugar to make the cookies rise faster.

1/2 teaspoon vanilla extract

To make the vanilla frosting, you will need:

1/2 teaspoon vanilla extract

  • Use a spoon to measure out 1/2 teaspoon of vanilla. You can use our Homemade Vanilla Bean Paste if you have it, but regular old vanilla extract is also fine!
  • The amount of sugar will depend on how sweet you like your cookie dough and cookies (or how much sugar your pregnant partner likes). If you’re not sure what to add, I recommend starting with 2 tablespoons and then tasting as you go along. Add more or less depending on your taste.

3 teaspoons milk

3 teaspoons milk (or water) are mixed with 2 cups of flour. I would recommend using the milk, but if you don’t have any on hand, feel free to substitute it with water. It will just make your dough a little more crumbly than it would be if you added some liquid of some sort when making the cookie dough!

pink food colouring OR a few drops of red and yellow food colouring if you don’t have pink (I used a teeny tiny bit of yellow and red, the yellow was much more noticeable than the red)

Blue is lighter-coloured than yellow. So if you have the right amount of each, your cookies will be green! You could also use red and yellow together to make orange.

royal icing or similar – I use this royal icing recipe because it’s foolproof! You’ll need pink and blue for this. If you want to make your own, equal amounts of icing sugar to water will do. But be warned – this is not as easy as it looks! I’ve seen gorgeous creations made with home made royal icing but for me personally, the easiest way is to buy the ready-made stuff. It’s easier to work with and pipe with that home made stuff!

Royal icing is a mixture of icing sugar and water that is used to pipe decorations on cakes. It can be made at home but if you’re like me and prefer not to fuss around with recipes, it’s available ready-to-use in most supermarkets. It comes in various colours – I used pink and blue for these cookies but you can also find white, silver (to look like glitter), bright green etc.

It’s important to note that royal icing dries quickly so it won’t work well if your cookie dough isn’t chilled first!

Pipe a round outline onto the bottom half of your cookie with either the tip of your piping bag or by squeezing out some royal icing onto the surface of your cookie dough. Then pipe some more lines inside this circle shape until you’ve covered everything except for an area where we’ll put our circle pattern later on!!

Tips for sharing your exciting news:

  1. Make sure your phone/recording device/camera is charged ahead of time. You will want to capture the moment, or better yet, have a trusted friend come along who can do that for you. Gently remind them you are counting on them to keep the camera rolling.
  2. Only invite parties that you know will share your joy, not spoil the moment. (In other words, only invite those that spark your joy, the ones who cheer you on). Life is full of people who will dismiss your plans and try to negate your joy, don’t invite those people to your party.
  3. Keep it simple, so that you can enjoy the moment. If any special arrangements need to be made, enlist the support of your partner or friend.
  4. Need to place an order? Do it early to ensure a timely delivery.
  5. Tissue. Lots of tissue. Need we say more?
